Monosodium Glutamate is a basic ingredient of Chinese cooking. It's known in Japan as "umami". Glutamate has been recognized for its attributes in helping in the natural ripening process. Also in western cooking its enhancing properties have been used in a wide array of recipes from Italian lasagna to American chowders.
